[SAMPLE RECIPE] EGG AND SAUSAGE MUFFINS These have just enough added spice with the sausage, but if you like things a little spicier then add a few pepper flakes on top of each muffin cup before baking or whisk into the egg mixture with the other ingredients. Ingredients • 2 spicy Italian sausage links • 1 tablespoon butter • 6 eggs • 1 cup shredded cheddar cheese • Salt and pepper to taste Instructions • Preheat the oven to 350°F • Spray a jumbo muffin tin with a non-stick spray. • Thinly slice the sausage links (but not too thin). • Sauté sausage slices in butter over medium high heat. • Place an even amount of sausage slices on the bottom of each muffin cup. • Whisk eggs, hot sauce, salt and pepper in a bowl; add the cheese and mix one more time. • Pour the egg mixture into the muffin tin over the sausage pieces. • Bake for 20 minutes. • Turn the oven off. • Let the cupcake tin rest in the hot oven for an additional 5 minutes before removing.
