Dr. Janet Seabrook M.D., MBA is the CEO and founder of Community HealthNet, a Federally Qualified Health Center. Born in Charleston, South Carolina to parents John and Senella Seabrook, she was raised in Gary, Indiana. Dr. Seabrook holds a Bachelor of Science Degree from Tuskegee University in Tuskegee, Alabama, a Medical Degree from Meharry Medical College in Nashville, TN and a Master’s in Business Administration from Purdue University in Hammond, Indiana.
Her love for cooking began at a very young age and was further cultivated most evenings as she completed her homework at the kitchen table while her mom prepared dinner. Seabrook recalls asking her mom tons of questions about various ingredients, cooking styles and family recipes. After years of preparing delicious meals passed down by her ancestors in her own kitchen, Dr. Seabrook has finally developed a compilation of these family recipes. Her ultimate goal was to build a healthy, flavorful profile of entrees where the taste is enhanced without taking away the memories of her childhood.
This recipe book achieves the goal of making healthy foods that are flavorful and flexible. Healthy substitutions are the perfect way to turn the recipes into your own. Years ago, while taking care of my patients, I would often discuss their eating habits. Inevitably, our conversations would turn to what they liked to cook, the seasonings they used and whether vegetables were included on the menu.
