This collection of luscious sweets completes Jack Santa Maria's trilogy of cookbooks covering the traditional recipes of India. Like "Indian Vegetarian Cookery" and "Traditional Indian Cookery", the recipes in this book have been collected from all over the Indian sub-continent. Over 200 recipes for bonbons, fudges, halvas, sweets in syrup, cakes, balls and dumplings, biscuits, pastries, sweet breads, puddings, and drinks are included. Each stp in preparation, including proper utensils and serving, as well as an explanation of the Indian ingredients used and where to buy them, supplement the recipes. Stores from Indian folklore are interspersed throughout the book, showing the meanings attached to sweets in Hindu mythology.
