<p>This book is written to meet the needs of students of Indian Universities pursuing careers in foods, nutrition and allied courses at the undergraduate and postgraduate levels.The book gives a comprehensive account of nutrients, their functions, metabolism, storage, deficiencies and treatment. An effort has been made to include additional chapters on the interactions between nutrients and the immune system, nutrients and drugs, nutrients and hormones, antioxidants and sports nutrition. The nutrients in foods and the RDA are taken from the manual, Nutritive Value of Indian Foods, published by National Institute of Nutrition. At the end of each chapter, questions are provided for the benefit of students preparing for examinations.The nutrients in the body do not work in compartments individually. There is always an interaction and relationship between the various nutrients. This interaction has been brought out in each chapter.I hope students using this book find it valuable.I would appreciate critical comments from the users of this book so that improvements can be made.</p>
